Tawa Scallops
Executive Chef Surjeet Rajput adds a touch of Indian spice to his fiery scallop dish at Benares Midtown.

Tawa Scallops
Chutney Ingredients:
8 oz tomatillos, chopped
2 jalapeños
4 cloves garlic
2 oz ginger
½ Tbsp sugar
2 Tbsp olive oil
½ tsp cumin
½ tsp coriander
2 oz cilantro
2 bunches scallions, chopped
1 Tbsp lemon juice
Salt to taste
Scallops Ingredients:
12 jumbo scallops
¼ tsp turmeric powder
¼ tsp chili powder
¼ tsp black pepper
Pinch of salt
Mango & Tomato Relish Ingredients:
1 mango (green), peeled,
cleaned and diced
1 tomato, diced
2 Tbsp cilantro, chopped
1 jalapeño, chopped
2 Tbsp mango purée
1 Tbsp cumin, roasted and
coarsely ground
Juice of ½ lemon
Pinch of salt
Procedure:
FOR THE CHUTNEY:
1. Heat oil in a medium-sized pan. 2. Sauté ingredients for four to five minutes. 3. Put in blender and coarsely grind for a chunky paste. 4. Check seasoning and add lemon juice.
FOR THE SCALLOPS:
1. Rub the scallops with spices. 2. Heat 1 tbsp oil in a large pan. 3. When the pan is hot, cook the scallops for approximately two minutes on each side, so they develop a nice sear.
FOR THE MANGO AND TOMATO RELISH:
1. Combine all ingredients together in a medium bowl. 2. Stir thoroughly.
TO PLATE:
1. Place chutney on your serving dish.
2. Add scallops, garnish with the relish and enjoy!
